Scrumptious Chocolate Spice Cake

  It's hard to express words that define this cake, but we'll give it a shot! Well first, who doesn't love chocolate ginger cake, it's rich, dense, and heavenly! And the best part...IT'S SO SIMPLE! Our mom used to make this recipe all the time, and when we found the recipe hiding in our cookbook, we knew we had to make it right away! We love how this cake mixes spicy with sweet, it is just so full of flavour and it makes your mouth water! When we took the pan out of the oven we kept going back every 5 seconds to see if we could cut into it! So here friends, is the most tasty ginger cake recipe you will ever find!

Chocolate Ginger Cake
For every time we have made this cake, we have not had one single person who did not look like a wide eyed Bambi after taking their first bite of this cake! This is both of our FAVOURITE cake; moist, sweet, soft, with a hint of spice...who could resist? This cake makes an excellent snacking cake you and your family could munch on throughout the week. Get ready to taste the best cake of your life!

INGREDIENTS

1/2 cup unsalted butter (soft)
1/2 cup unsweetened cocoa powder
1/2 cup unsulfured molasses
3/4 cup brown sugar
2 eggs
1/4 cup milk
1/4 cup water
2 teaspoons grated ginger
1 cup flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ginger (powder)
1 teaspoon cinnamon

DIRECTIONS

1. Use an 8 inch-8 inch pan and dust with flour. Pre-heat oven to 350 F.
2. Combine butter, molasses, brown sugar, 1/4 cup water in a medium saucepan on medium-low heat until butter is melted. Transfer to bowl and let cool.
3. Add eggs, milk, ginger (grated ginger) to molasses mixture and whisk to combine.
4. Sift flour, cocoa powder, baking soda, ginger (powder) and cinnamon. Mix into molasses.
5. Pour batter into pan. Bake for 30 minutes.
