Vegan Blueberry Muffins
This muffin recipe does not only make a delicious dessert, but a fresh and healthy breakfast! This recipe is made with spelt flour, they don't have any sugar, and are vegan- we try to make everyone happy! They make a perfect last minute snack if you are running out the door. Now they aren't the neatest thing in the world to eat, but we assure you, they are the most delicious breakfast blueberry muffins you will ever eat!

INGREDIENTS
1/2 cup vegetable oil
1/2 cup soy milk (or regular milk)
1/2 cup real Vermont maple syrup
1/4 cup light agave nectar
1 cup white spelt flour
1 cup whole spelt flour
2 teaspoons baking powder
1/2 teaspoon fine salt
2 1/2 cups fresh blueberries
DIRECTIONS
1. Preheat oven to 375 F. Line a 12-cup muffin tin with papers.
2. Mix wet ingredients together, stir in the dry ingredients, and fold in the blueberries. Divide among the muffin cups and bake until a toothpick tests clean and the muffins are golden brown, 25-30 minutes.
3. Let cool before eating. ENJOY!
