Poached Pear Stuffed with Chocolate

Part 2 is finally here! We had so much fun baking with Nicole (bakemeblush) and our friend Jaclyn! Now we can finally say that we have poached pears! We have always wanted to try it, and when our mom came home with a bunch of pears, we took the opputunity! We decided to add the chocolate in the middle because who doesn't love a choclate surprise! I think every baker, at one point or another, needs to attempt to poach some pears! You just have to!

Poached Pear Stuffed with Chocolate

Have you ever eaten a poached pear? To be honest, we never heard of them before we made them and we don't really know why...they're awesome! Not only is the flavour of the infused pear so juicy and moist, but the melted chocolate on the inside is such a delightful surprise! We served these pears the same night we served the pear crumbles, and usually the crumble is always our favourite, but we were so surprised how delicious they came out! We definitely recommend using mini pears...it makes it so much more special...like it was made especially for you!

INGREDIENTS

7 mini pears
1 cup (250 mL) red wine
zest of half a lemon
1 tbsp (15 mL) fresh lemon juice
1/2 cup (125 mL) sugar
1/2 stick cinnamon
1 tsp (2.5 mL) vanilla
About 35 chocolate morsels (4-5 for each pear)
DIRECTIONS

1. Peel pears with vegetable peeler, keeping stems intact. Trim bottom so they can stand. Place in deep saucepan.
2. In another saucepan, pour in red wine, lemon zest, lemon juice, sugar, cinnamon and vanilla. Bring to a boil.
3. Pour over pears and add enough boiling water to cover. Simmer very slowly, until just tender. Test by inserting a skewer. Remove pears carefully to a dish.
4. Rapidly boil liquid and reduce until only 1/2 cup (125 mL) remains.
5. Meanwhile, when pears have cooled using a very small spoon flip the pears over and scoop our the seeds making a little tunnel in the pears, then using about 4-5 pieces of chocolate morsels or whatever will fit in each pear, stuff each pear until it is full.
6. Pour red wine sauce over pears, and just before serving put the oven to 350F and let the pears heat up for 5-10 minutes, unitl chocolate has melted.
